Marinate the Cod

In a bowl, combine miso paste, soy sauce, mirin, and sesame oil. Mix well. Place the black cod in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes, preferably overnight.

Prepare the Vegetables

While the fish is marinating, clean and chop the bok choy and shiitake mushrooms. Set aside.

Cook the Cod

Preheat the oven to 400°F (200°C). Remove the cod from the marinade and place it on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.

Sauté the Vegetables

In a large skillet, heat a little oil over medium heat. Add minced garlic and ginger, sauté for 1 minute until fragrant. Add bok choy and shiitake mushrooms, season with salt and pepper. Cook for 5-7 minutes until the vegetables are tender.

Serve

On a plate, place a portion of the sautéed vegetables, top with the baked black cod, and drizzle with unagi sauce. Enjoy!
