Pasta Preparation

Cook the Pasta

In a large pot, bring water to a boil. Add a pinch of salt. Once boiling, add 2 cups of elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Cheese Sauce

Make the Roux

In the same pot used for the pasta, melt 4 tablespoons of unsalted butter over medium heat. Once melted, whisk in 2 tablespoons of all-purpose flour. Cook for about 1-2 minutes until the mixture is bubbly and golden, stirring constantly.

Add Milk

Gradually whisk in 2 cups of milk into the roux. Continue to cook, stirring constantly, until the mixture begins to thicken, about 5-7 minutes.

Incorporate Cheeses

Reduce heat to low, then add 2 cups of shredded cheddar cheese and 4 oz of softened cream cheese. Stir until all the cheese is melted and the sauce is creamy. Season with 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of mustard powder.

Combine and Bake

Mix Pasta and Cheese Sauce

Add the drained macaroni to the cheese sauce, stirring until the pasta is fully coated with the sauce.

Prepare Topping (Optional)

If using toppings, mix 1 cup of breadcrumbs with 1 tablespoon of grated Parmesan cheese and 1 teaspoon of paprika in a small bowl.

Bake

Preheat the oven to 350°F (175°C). Pour the mac and cheese mixture into a greased baking dish. If using, sprinkle the breadcrumb mixture on top. Bake for 20-25 minutes until bubbly and golden on top.
