Dry shake
Add Empress 1908 gin, Aperol, Agavero, fresh lemon juice, egg white, and simple syrup (if using) to a cocktail shaker WITHOUT ice. Seal and shake vigorously for 15–20 seconds to emulsify and create a frothy head.
Wet shake
Open the shaker, add a large handful of ice (or about 6–8 large cubes), reseal and shake hard for 12–15 seconds until the shaker is well chilled (shaker will frost). This both chills and properly dilutes the cocktail.
Strain
Double-strain the cocktail through a Hawthorne strainer and a fine mesh strainer into a chilled coupe or Nick & Nora glass to remove ice shards and ensure a silky texture and smooth foam.
Garnish & Finish
Let the foam settle slightly, then add 2 dashes of Angostura bitters atop the foam. Use a toothpick or small skewer to gently drag the bitters into a simple pattern if desired.
