Tempura Shrimp

Sriracha Mayonnaise

Method

Preparation

  1. 1

    Prepare the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the ice water, stirring until just combined. The batter should be lumpy.

  2. 2

    Prepare the Sauces

For the sriracha mayonnaise, mix the mayonnaise, sriracha sauce, and lime juice in a small bowl. For the smoked jalapeño aioli, combine the mayonnaise, smoked jalapeño, minced garlic, and lemon juice in another bowl.

Cooking

  1. 3

    Fry the Shrimp

In a deep pot, heat the vegetable oil to 350°F (175°C). Dip each shrimp into the tempura batter, allowing excess to drip off, and carefully place them in the hot oil. Fry in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serving

  1. 4

    Plate and Garnish

Arrange the crispy tempura shrimp on a serving platter. Drizzle with sriracha mayonnaise and smoked jalapeño aioli. Garnish with toasted sesame seeds and chopped green onions before serving.
