Prepare the Caramelized Onions

    Caramelize the Onions

    Heat olive oil in a skillet over medium heat. Slice the onion and add it to the skillet. Sprinkle with salt and cook, stirring occasionally, until the onions are golden and caramelized, about 15-20 minutes. Remove from heat.

Make the Smoked Jalapeño Aioli

    Blend the Aioli

    In a food processor, combine mayonnaise, smoked jalapeños, garlic, and lemon juice. Blend until smooth. Adjust seasoning to taste.

Prepare the Au Jus

    Simmer the Au Jus

    In a saucepan, combine beef broth and Worcestershire sauce. Bring to a simmer and cook for 10 minutes. Season with black pepper to taste.

Assemble the Sandwich

    Build the Sandwich

    Preheat a grill or skillet. Place sliced prime rib on the bottom half of each brioche bun. Top with caramelized onions and Monterey Jack cheese. Cover with the top half of the bun. Grill or toast until the cheese is melted, about 3-5 minutes.

Serve

    Serve with Au Jus

    Slice the sandwich in half and serve with au jus on the side for dipping.
