Preparing the Prime Rib

Roast the Meat
Place the seasoned prime rib in a roasting pan, bone side down. Roast in the oven for 20 minutes to create a crust. After 20 minutes, reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium rare.

Rest the Meat
Remove the prime rib from the oven and tent it with aluminum foil. Let it rest for at least 20 minutes before slicing.

Strain the Au Jus
Strain the au jus through a fine-mesh sieve to remove any solids and keep it warm until serving.
