Cooking the Pasta

Cook the Mafalda Pasta
Bring a large pot of salted water to a boil. Add mafalda pasta and cook according to package instructions until al dente. Drain and set aside.
Making the Cheese Sauce

Prepare the Cheese Sauce
In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute until lightly golden. Gradually whisk in the milk, stirring constantly until the mixture thickens. Stir in the truffled Monterey Jack cheese until melted and smooth. Season with salt and black pepper to taste.
Combining and Serving

Combine Pasta and Sauce
In a large bowl, combine the cooked mafalda pasta with the cheese sauce. Mix well to ensure the pasta is evenly coated.

Prepare the Truffled Panko
In a skillet, heat truffle oil over medium heat. Add panko breadcrumbs and toast until golden brown. Remove from heat and stir in grated Parmesan cheese.
