Gnocchi Preparation

    Prepare the Potatoes

    Boil the potatoes in salted water until tender. Drain and let cool, then peel and mash them.

    Make the Gnocchi Dough

    In a bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. If too sticky, add more flour.

    Shape the Gnocchi

    Divide the dough into small pieces and roll each piece into a rope shape. Cut into small pieces and press with a fork to shape.

Tomato Sauce Preparation

    Cook the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes, oregano, salt, and pepper. Let simmer for 15-20 minutes.

Vegetable Preparation

    Grill the Vegetables

    Grill the sliced bell pepper and zucchini until charred and tender, about 5-7 minutes. Add cherry tomatoes and grill for an additional 2-3 minutes.

Halloumi Preparation

    Sear the Halloumi

    In a skillet, add a bit of olive oil and sear the halloumi slices for 2-3 minutes on each side until golden brown.

Assembly

    Combine and Serve

    Cook the gnocchi in boiling salted water until they float. Drain and add to the tomato sauce. Serve topped with grilled vegetables, seared halloumi, and fresh basil.
