Marinate the Chicken
In a bowl, combine the buttermilk, salt, black pepper, paprika, and garlic powder. Add the chicken tenders and marinate for at least 1 hour in the refrigerator.

Prepare the Breading
In another bowl, mix together the flour and cornstarch. Beat the eggs in a separate bowl.

Bread the Chicken
Remove the chicken from the marinade, letting the excess drip off. Dip each tender first in the egg, then in the flour mixture, ensuring it is fully coated.

Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Once hot, carefully add the breaded chicken tenders and fry for about 5-7 minutes until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Place a fried chicken tender on the bottom half of each potato bun. Top with lettuce, a generous scoop of coleslaw, and drizzle with smoked jalapeño aioli. Close with the top half of the bun.
