Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.

    Combine Wet Ingredients

    In another bowl, beat the eggs, then add the vegetable oil and vanilla extract. Mix well.

    Combine Mixtures

    Add the wet mixture to the dry ingredients and stir until just combined. Fold in the grated carrots, crushed pineapple, and chopped walnuts.

    Bake the Cake

    Divide the batter evenly among the three prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Frosting Preparation

    Prepare the Frosting

    In a medium bowl, beat the cream cheese and unsalted butter together until smooth. Gradually add the powdered sugar and mix until well combined. Stir in the vanilla extract.

    Assemble the Cake

    Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of frosting on top, then add the second cake layer and repeat. Top with the third layer and frost the top and sides of the cake.
