1. Cook Quinoa
Rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring it to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork.
2. Prepare Vegetables
While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the diced red onion and sauté for about 3-4 minutes until translucent. Add the diced red bell pepper and corn, and cook for another 5 minutes until the peppers are tender.

3. Combine Ingredients
In a large mixing bowl, combine the cooked quinoa, sautéed vegetables, black beans (drained and rinsed), chopped cilantro, cumin, smoked paprika, salt, and black pepper. Mix well to combine all the ingredients.
4. Add Lime Juice
Drizzle the lime juice over the mixture and stir to combine. Adjust seasoning with more salt and pepper if needed.
Serving
5. Serve
Serve the B R Y A C Black Rock warm or at room temperature. Garnish with additional cilantro if desired.
