Prepare the Filling

Sauté the Spinach
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

Mix the Filling
In a large bowl, combine the ricotta cheese, sautéed spinach, mozzarella cheese, parmesan cheese, salt, and black pepper. Mix until well combined and set aside.
Cook the Pasta

Boil the Linguini
Bring a large pot of salted water to a boil. Cook the linguini according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
Prepare the Sauce

Cook the Sauce
In a saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the crushed tomatoes, Italian seasoning, sugar, salt, and black pepper. Stir well and let simmer for about 15 minutes.
Assemble and Bake

Stuff the Pasta
Using a spoon, carefully stuff each cooked linguini with the cheese and spinach filling. Place the stuffed pasta in a baking dish.

Add Sauce
Pour the prepared sauce evenly over the stuffed linguini in the baking dish.

Bake
Preheat the oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until bubbly and golden.
