Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Crust Ingredients

    In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until the mixture resembles wet sand.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Bake the Crust

    Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from oven and let cool.

Filling Preparation

    Mix the Filling

    In a large bowl, combine the ricotta cheese, softened cream cheese, granulated sugar, eggs, vanilla extract, lemon zest, and salt. Beat with an electric mixer on medium speed until smooth and creamy.

    Pour into Crust

    Once the mixture is smooth, pour it over the cooled crust in the springform pan.

    Bake the Cheesecake

    Bake in the oven for 50-60 minutes, or until the center is set and slightly jiggly. The edges should be lightly golden.

    Cool and Chill

    Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour. Once cooled, refrigerate for at least 4 hours or overnight.

Topping Preparation

    If using fresh berries, wash and dry them gently.

    Before serving, sprinkle the cheesecake with powdered sugar and top with fresh berries if desired.
