    Clean the Clams

    Soak the clams in cold water for about 30 minutes to help them purge any sand. Rinse them under cold running water to remove any debris.

    Prep the Ingredients

    Chop the bacon into small pieces, mince the garlic, and chop the sun-dried tomatoes into smaller pieces if they are whole. Finely chop the parsley and set aside.

Cooking

    Cook the Bacon

    In a large pot or skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon pieces and set aside, leaving the rendered fat in the pot.

    Sauté the Aromatics

    In the same pot with the bacon fat, add the minced garlic and cook for about 1 minute until fragrant. Be careful not to burn it.

    Add the Wine and Tomatoes

    Pour in the white wine and add the sun-dried tomatoes. Bring to a simmer and let it cook for about 2 minutes.

    Steam the Clams

    Add the cleaned clams to the pot. Cover with a lid and allow to steam for about 5-7 minutes or until the clams have opened. Discard any clams that do not open.

    Finish the Dish

    Once the clams are cooked, stir in the reserved bacon and season with salt, black pepper, and red pepper flakes. Stir well to combine and remove from heat.

    Garnish and Serve

    Sprinkle the chopped parsley over the clams. Serve immediately with crusty bread to soak up the delicious broth.
