Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water before draining the spaghetti.

  2. 2

    Prepare the Sauce

While the pasta is cooking, cut the bacon or pancetta into small pieces. In a large skillet over medium heat, cook the bacon until it is crispy, about 5-7 minutes. Remove from heat and set aside.

  3. 3

    Mix Eggs and Cheese

In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

Combine and Serve

  1. 4

    Combine Pasta and Bacon

Once the spaghetti is cooked and drained, add it to the skillet with the crispy bacon. Toss to combine and ensure the spaghetti is well coated with the bacon fat.

  2. 5

    Add Egg Mixture

Remove the skillet from the heat and quickly pour in the egg and cheese mixture, tossing continuously to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.

  3. 6

    Garnish and Serve

Taste and adjust seasoning with more black pepper if needed. Serve immediately, garnished with fresh parsley if desired.
