Method

Cooking the Pasta

  1. 1

    Boil the Spaghetti

In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

Preparing the Seafood and Vegetables

  1. 2

    Sauté Shrimp and Clams

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

  2. 3

    Add Shrimp and Clams

Add the shrimp and clams to the skillet. Cook for about 3-5 minutes, or until the shrimp turn pink and the clams open up. Remove from the skillet and set aside.

  3. 4

    Sauté Mushrooms

In the same skillet, add the remaining tablespoon of olive oil and the sliced mushrooms. Sauté until the mushrooms are golden brown, about 5-7 minutes.

Making the Pesto Sauce

  1. 5

    Prepare the Pesto

In a food processor, combine the fresh basil leaves, pine nuts, and Parmesan cheese. Pulse until finely chopped. With the processor running, slowly add the heavy cream until it reaches a smooth consistency.

Combining Ingredients

  1. 6

    Combine Everything

Return the cooked shrimp and clams to the skillet with the sautéed mushrooms. Add the pesto sauce and cooked spaghetti. Toss everything together until well coated. Season with salt and black pepper to taste.

Serving

  1. 7

    Serve Hot

Serve the seafood spaghetti hot, garnished with extra Parmesan cheese and fresh basil if desired.
