Panna Cotta Base Preparation

    Bloom the Gelatin

    In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5-10 minutes to bloom.

    Heat the Cream Mixture

    In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally to dissolve the sugar.

    Incorporate Gelatin

    Remove the saucepan from the heat and stir in the bloomed gelatin and vanilla extract until fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Cover with plastic wrap and refrigerate for at least 4-6 hours or until set.

Berry Sauce Preparation

    Prepare the Berry Sauce

    In a saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the berries break down and the sauce thickens slightly.

    Cool the Sauce

    Remove from heat and let the berry sauce cool to room temperature. It can be blended if a smoother texture is desired.

    Once the panna cotta is set, carefully remove it from the molds. Top with the berry sauce just before serving.
