Boil the Linguini
Fill a large pot with water, add salt and bring it to a boil. Once boiling, add the linguini and cook according to package instructions until al dente, usually around 8-10 minutes.

Drain and Set Aside
Once cooked, drain the linguini in a colander and set aside. Do not rinse.
Preparing Chicken

In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side or until fully cooked and no longer pink in the center. Remove chicken from the skillet and let it rest for a few minutes before slicing.

Blend Pesto Ingredients
In a food processor, combine fresh basil, pine nuts, parmesan cheese, garlic, lemon juice, and salt. Pulse until finely chopped. While the processor is running, slowly add olive oil until the mixture is smooth and creamy.

Stir in the sun-dried tomatoes, and sprinkle with additional parmesan cheese and fresh basil leaves.

Plate the linguini pesto and serve immediately while hot. Enjoy your delicious meal!
