Gelato Base Preparation

Combine Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.

Thicken the Mixture
Return the tempered mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 10 minutes.

Add Vanilla
Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate until chilled, about 2 hours.
Flavoring and Churning

Flavor Base
Once the gelato base is chilled, divide it into three portions for different flavors. For chocolate gelato, stir in chocolate syrup; for strawberry gelato, mix in pureed strawberries; and for pistachio gelato, fold in chopped pistachios.

Churn the Gelato
Pour the flavored mixtures into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to airtight containers and freeze until firm, at least 4 hours.
