Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, cocoa powder, granulated sugar, and salt. Mix well.

Add Wet Ingredients
Cut in the unsalted butter until the mixture resembles coarse crumbs. Add the egg white and wine or vinegar, mixing until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll and Cut
After resting, roll out the dough to about 1/8 inch thickness. Cut into circles about 4 inches in diameter.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, mini chocolate chips, and orange zest. Mix until smooth and well combined.

Fill the Cannoli
Once the shells are completely cool, carefully remove them from the tubes. Use a piping bag to fill each shell with the ricotta mixture.

Dust the filled cannoli with powdered sugar and sprinkle with chocolate shavings before serving.
