Cannoli Shells

    Prepare the Dough

    In a mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well.

    Add Wet Ingredients

    In the same bowl, add egg yolks, white wine (or vinegar), melted unsalted butter, and water. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll Out the Dough

    After resting, roll out the dough thinly (about 1/8 inch thick) and cut into 4-inch circles.

    Fry the Shells

    Heat vegetable oil in a deep pot to 350°F (175°C). Wrap each circle around a metal cannoli tube and fry until golden brown, about 2-3 minutes per side. Remove and let cool on paper towels.

Ricotta Filling

    Prepare the Filling

    In a mixing bowl, combine ricotta cheese and powdered sugar. Mix until smooth.

    Stir in vanilla extract and chocolate chips until evenly distributed.

    Fill the Shells

    Using a piping bag or a spoon, fill each cooled cannoli shell with the ricotta filling.

Topping

    Sprinkle the filled cannoli with powdered sugar.
