    Prepare the Chicken

    Season the chicken thighs with salt, black pepper, and dried oregano on both sides.

    Chop the Vegetables

    Chop the onion, bell pepper, carrot, and slice the mushrooms. Mince the garlic and chop the fresh basil.

Cooking

    Sauté the Chicken

    In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken thighs and brown them on both sides for about 5 minutes each. Remove the chicken from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the chopped onion, bell pepper, carrot, and mushrooms. Sauté for about 5-7 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Combine and Simmer

    Return the chicken to the skillet, then pour in the marinara sauce and chicken broth. Add red pepper flakes for heat. Bring the mixture to a simmer, cover, and reduce the heat to low. Let it cook for about 30 minutes, or until the chicken is cooked through and tender.

    Once the chicken is cooked, remove it from the skillet and shred it using two forks. Return the shredded chicken to the skillet and stir until fully combined.
