Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.

  2. 2

    Bread the Chicken

Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese. Dredge each chicken breast first in flour, then dip in eggs, and finally coat with the breadcrumb mixture.

  3. 3

    Fry the Chicken

In a large skillet, heat the olive oil over medium heat. Add the breaded chicken breasts and cook for about 5-7 minutes on each side, or until golden brown. Transfer the chicken to a baking dish.

Sauce Preparation

  1. 4

    Make the Tomato Sauce

In the same skillet, add 2 tablespoons of olive oil over medium heat. Sauté the minced garlic for about 1 minute until fragrant. Add the crushed tomatoes, oregano, salt, and black pepper. Stir to combine and let simmer for about 10 minutes.

  2. 5

    Add Fresh Basil

Stir in the chopped fresh basil and cook for an additional 2 minutes. Remove from heat.

Assembly and Baking

  1. 6

    Assemble the Dish

Pour the tomato sauce evenly over the fried chicken breasts in the baking dish. Sprinkle shredded mozzarella cheese on top.

  2. 7

    Bake

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.

  3. 8

    Garnish and Serve

Remove from the oven, garnish with fresh basil leaves, and serve hot with pasta or a side salad.
