Calamari Preparation

Clean the Squid
Begin by cleaning the squid. Remove the head, innards, and the transparent quill from inside the body. Rinse the squid thoroughly under cold water and slice the body into rings.

Dredge the Squid
Dip the squid rings into the egg mixture, allowing excess to drip off, then coat them in the flour mixture. Ensure that each ring is evenly coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Squid
Working in batches, carefully add the coated squid rings to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Marinara Sauce Preparation

Sauté Garlic
In a saucepan, heat the olive oil over medium heat. Add the minced garlic cloves and sauté until fragrant, about 1-2 minutes.

Add Tomatoes and Seasonings
Pour in the crushed tomatoes, dried oregano, salt, black pepper, and sugar. Stir to combine and let the sauce simmer for about 15 minutes.

Finish with Basil
Tear the fresh basil leaves and add them to the sauce. Stir well and let it simmer for an additional 5 minutes.
