Base Preparation

    Heat the Dairy

    In a medium saucepan, combine the heavy cream, whole milk, and half of the sugar (1/2 cup) over medium heat. Stir occasionally until the mixture is warm but not boiling.

    Prepare Egg Mixture

    In a separate bowl, whisk together the egg yolks and remaining sugar (1/2 cup) until the mixture turns pale and thick.

    Combine Mixtures

    Gradually add the warm cream mixture to the egg yolks while whisking continuously to temper the yolks. Once combined, return the mixture to the saucepan.

    Cook the Base

    Cook the mixture over medium heat, stirring constantly until it thickens enough to coat the back of a spoon, about 8-10 minutes. Do not let it boil.

    Cool the Base

    Remove from heat and stir in the vanilla extract. Pour the mixture into a bowl and let it cool to room temperature. Then refrigerate for at least 2 hours or until completely chilled.

Flavoring

    Divide the Base

    Once the base is chilled, divide it into three equal parts in separate bowls.

    Prepare Pistachio Flavor

    To one bowl, stir in the chopped pistachios and green food coloring until well combined.

    Prepare Chocolate Flavor

    To the second bowl, add the cocoa powder and mix until smooth and fully incorporated.

    Prepare Cherry Flavor

    To the third bowl, mix in the cherry puree and red food coloring until the mixture is evenly colored.

Freezing

    Layer the Flavors

    In a freezer-safe container, start by pouring in the pistachio mixture, smoothing it into an even layer. Follow with the chocolate layer, and then the cherry layer on top.

    Freeze

    Cover the container with a lid or plastic wrap and freeze for at least 4 hours or until solid.

Serving

    Scoop and Serve

    When ready to serve, remove the spumoni from the freezer and let it sit for a few minutes to soften slightly. Scoop into bowls and enjoy!
