Cake Layer

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk until well combined.

    Cream Butter and Sugar

    In another bowl, cream together the softened butter and remaining granulated sugar until light and fluffy.

    Add Eggs and Vanilla

    Beat in the eggs one at a time, then stir in the vanilla extract.

    Combine Mixtures

    Gradually add the dry ingredients to the butter mixture, alternating with the milk, until well combined.

    Bake the Cake

    Pour the batter into the prepared baking pan and spread evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

    Cool the Cake

    Allow the cake to cool completely in the pan on a wire rack before slicing into three even layers.

Ice Cream Layers

    Prepare Ice Cream Base

    In a large mixing bowl, whip the heavy cream until stiff peaks form. Gradually fold in the sweetened condensed milk and vanilla extract until combined.

    Divide Mixture

    Divide the ice cream base into three separate bowls.

    Flavor Each Layer

    In the first bowl, add chocolate syrup and mix well. In the second bowl, add strawberry puree and mix. In the third bowl, add pistachio paste and combine thoroughly.

    Layer the Ice Cream

    In a clean loaf pan or rectangular container, layer the chocolate ice cream, followed by the strawberry layer, and then the pistachio layer, smoothing each layer with a spatula.

    Freeze

    Cover the container and freeze for at least 4 hours, or until firm.

Assembly

    Layer Cake and Ice Cream

    Once the cake and ice cream are both cooled and firm, layer the three cake slices with the ice cream layers in between. Start with a cake slice, add chocolate ice cream, then a second cake slice, followed by strawberry ice cream, and finish with the last cake slice topped with pistachio ice cream.

    Top with chopped pistachios and chocolate shavings for garnish.

    Slice and Serve

    Slice the assembled cassata into squares and serve immediately or return to the freezer until ready to serve.
