Method
Burger Patties

Form patties
Divide the 1 lb ground beef into four equal portions (~4 oz each). Gently form each portion into a loose 6 oz-sized patty (about 3/4-inch thick) being careful not to overwork the meat. Press a shallow indentation in the center of each patty with your thumb to help them cook evenly and reduce doming.

Season
Lightly season both sides of each patty with kosher salt and freshly ground black pepper (approximately 1/4 tsp salt and 1/8 tsp pepper per patty). If using, brush or sprinkle about 1/8 teaspoon Worcestershire sauce per patty (total 1/2 tbs mixed into patties or lightly brushed on exterior).

Grill
Place the patties on the hot grill or pan. Cook without pressing for 3 to 4 minutes on the first side, until a dark crust forms. Flip once and cook 3 to 4 minutes on the second side for medium (internal temperature 140-145°F). For a 6 oz patty cooked slightly more or less, adjust by 1–2 minutes. If adding cheese, place a slice on each patty during the last 30–60 seconds and cover to melt.

Rest
Remove patties from heat and let rest on a plate loosely tented with foil for 2–3 minutes to let juices redistribute.

Assemble
Place the toasted bottom bun on a plate, add lettuce if using, place the rested patty on top, then add tomato slices, onion, pickles, and condiments (ketchup, mustard, mayonnaise) to taste. Top with the bun crown and serve immediately.
Optional Toppings

Adjust quantities of toppings per burger as desired. For a classic cheeseburger, use one slice of cheese per patty and melt as directed above. Add raw or lightly dressed lettuce and tomato. Serve additional condiments on the side.
