Prepare bread and spreads
Bring the Texas toast slices to room temperature for a few minutes. Spread 1 teaspoon mayonnaise on the inside face of each of two slices (optional) and 1/2 teaspoon Dijon mustard on the other two inside faces (optional). This adds moisture and tang beneath the cheeses. If you prefer no mayo/mustard, skip this step.

Assemble sandwiches
Place one slice of American cheese on the inside of one prepared bread slice. Top the cheese with 4 slices of deli ham, arranging evenly to cover the bread. Add one slice of Swiss cheese on top of the ham. Close with a second slice of bread, spread side inward. Repeat to make a second sandwich using the remaining bread and cheese/ham.

Butter the outsides
Spread about 1 tablespoon unsalted butter evenly over the outside face of each sandwich slice (approximately 1 tablespoon per sandwich, divided between the two outer faces). For easier spreading, soften butter slightly or use room-temperature butter. Alternatively, brush the outside with a thin coating of olive oil mixed into the butter for a crisper crust.

Preheat pan or griddle
Heat a skillet, griddle, or cast-iron pan over medium to medium-low heat. If desired, add 1 teaspoon neutral oil to the pan and swirl to coat; this helps prevent burning of butter and promotes even browning. The pan should be hot enough that a light sizzle is audible when the sandwich is placed on it, but not so hot that the bread browns in under one minute.

Grill the sandwiches
Place the sandwiches in the preheated pan, buttered side down. Cook for 3–4 minutes on the first side, pressing gently with a spatula to ensure even contact and melting. When the underside is golden brown and the cheese begins to melt, carefully flip the sandwich. Cook the second side for another 2–4 minutes until golden brown and the cheese is fully melted. If the bread is browning too fast before cheese melts, lower the heat and cover the pan for 1–2 minutes to trap heat and encourage melting.

Finish and season
Remove sandwiches from the pan and transfer to a cutting board. Let rest 1 minute. Sprinkle a light pinch of freshly ground black pepper over the cut surfaces if desired.

Slice and serve
Cut each sandwich diagonally in half (or in half straight across) and serve immediately while hot and melty. Serve alone or with pickles, potato chips, or a side salad as desired.
