    Make dressing

    In a small bowl, whisk together mayonnaise and sour cream until smooth. Stir in crumbled bleu cheese, lemon juice, Worcestershire sauce, salt, and freshly ground black pepper. Taste and adjust seasoning. Chill at least 15 minutes while you prepare other components.

    Cook bacon

    Place bacon slices in a cold skillet in a single layer. Cook over medium heat, turning occasionally, until evenly browned and crisp, about 8–10 minutes. Transfer to paper towels to drain and keep warm.

    Prep buns and vegetables

    Lightly butter cut sides of buns. Toast buttered sides in a clean skillet or griddle over medium heat until golden, about 1–2 minutes. Keep tomato slices, lettuce leaves and onion rings ready.

    Season patties

    Pat the 6 oz patties dry with paper towel. Form a slight indentation in the center of each patty with your thumb to prevent doming. Sprinkle both sides generously with kosher salt and then press the coarsely cracked black pepper onto both sides so a pepper crust forms.

    Cook patties

    Heat 1 tablespoon neutral oil in a heavy skillet or cast-iron pan over medium-high heat until shimmering. Add patties and cook undisturbed for 3–4 minutes to develop a crust. Flip once and cook 2–3 minutes for medium-rare to medium, or longer to desired doneness. During the last minute of cooking, place one slice of Swiss cheese on each patty and cover the pan briefly to melt the cheese, about 30–60 seconds.

    Assemble burgers

    Spread about 2 tablespoons of bleu cheese dressing on the bottom half of each toasted bun. Place lettuce leaf on the dressing to act as a moisture barrier, then add the cheesy patty. Top each patty with two slices of cooked bacon, a tomato slice and a few onion rings. Spoon any remaining bleu cheese dressing on the top bun and close the burger. Serve immediately.

    Serving suggestion

    Serve with fries or a simple side salad. If you made extra dressing, offer additional dressing on the side.
