Method

Burger

  1. 1

    Form patty

Divide 6 oz of ground beef and gently form into a 3/4-inch thick patty about 3 1/2 to 4 inches wide. Do not overwork the meat; press a shallow dimple in the center with your thumb to help the patty cook evenly and resist doming.

  2. 2

    Season

Season both sides of the patty with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper just before cooking.

  3. 3

    Cook patty

Heat a skillet or cast-iron pan over medium-high heat for 2–3 minutes until very hot. Add 1 tsp vegetable oil and swirl to coat. Place the patty in the pan and cook uncovered for 3–4 minutes on the first side until a brown crust forms. Flip once and cook 2–3 minutes more for medium doneness (internal temperature about 145–155°F / 63–68°C). Adjust time for desired doneness.

Cheese

  1. 4

    Melt cheeses on patty

When the patty has about 30–45 seconds remaining, lay one slice of American cheese and one slice of Swiss cheese on top of the patty. Cover the pan with a lid or tent with foil to trap steam and melt the cheeses for 30–45 seconds until fully melted and slightly gooey.

Bun & Finish

  1. 5

    Toast bun

While the cheese melts, spread 1 tsp softened butter evenly on the cut sides of the bun. Place the buns butter-side down in a separate dry skillet over medium heat or on a grill for 30–60 seconds until golden and toasted. Remove and keep warm.

  2. 6

    Assemble burger

Place the melted-cheese-topped patty on the bottom bun. Add optional condiments and toppings as desired: 1 tsp mayonnaise, 3 pickle slices, 1 tomato slice, 0.25 cup shredded or leaf lettuce, and 2 slices thin red onion. Top with the bun crown.

  3. 7

    Rest & serve

Let the assembled burger rest 1 minute to settle juices, then serve immediately while hot.
