Omelet Directions

    Prepare the Vegetable Mixture

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, bell pepper, and chopped spinach. Sauté for about 5 minutes, or until the vegetables are tender. Season with salt and black pepper. Remove from heat and set aside.

    Mix the Eggs

    In a bowl, whisk together the eggs and milk until well combined. Add a pinch of salt and black pepper.

    Cook the Omelet

    In the same skillet, add the remaining tablespoon of olive oil and heat over medium heat. Pour in the egg mixture and allow it to cook undisturbed for about 2-3 minutes, or until the edges start to set.

    Add the Filling

    Once the edges are set, add the sautéed vegetables and sprinkle the Milton cheddar cheese over one half of the omelet. Carefully fold the other half over the filling and cook for another 2 minutes, or until the cheese melts.

    Slide the omelet onto a plate and cut it in half. Serve hot.

    In a pot, bring water to a boil and add the diced potatoes. Boil for about 5 minutes until slightly tender, then drain.

    In a skillet, heat the olive oil over medium heat. Add the boiled potatoes and season with paprika, salt, and black pepper. Fry for about 10 minutes, stirring occasionally, until golden brown and crispy.

    Transfer the home fries to a plate and serve alongside the omelet.

    Spread butter on each slice of bread. Toast in a skillet over medium heat until golden brown on both sides, about 2-3 minutes per side.
