Meat Soup Directions

    Prepare the Ingredients

    Chop the beef chuck roast into 1-inch cubes. Dice the carrots, celery, and onion. Mince the garlic.

    Sear the Meat

    In a large pot, heat a tablespoon of oil over medium-high heat. Add the beef cubes and sear until browned on all sides, about 5-7 minutes.

    Add Vegetables and Broth

    Add the chopped carrots, celery, onion, and garlic to the pot. Sauté for another 5 minutes. Pour in the beef broth, and add bay leaves, thyme, salt, and black pepper.

    Simmer the Soup

    Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beef is tender.

    Adjust Seasoning and Serve

    Taste the soup and adjust seasoning with more salt and pepper if needed. Remove bay leaves before serving.

    Chop the carrots, potatoes, zucchini, and onion. Mince the garlic.

    Sauté the Vegetables

    In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and garlic, sauté for 2-3 minutes until translucent.

    Add Remaining Vegetables and Broth

    Add the carrots, potatoes, zucchini, green beans, corn, vegetable broth, thyme, salt, and black pepper to the pot.

    Simmer the Soup

    Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes, or until the vegetables are tender.

    Adjust Seasoning and Serve

    Taste the soup and adjust seasoning with more salt and pepper if needed before serving.
