Prepare the Ingredients
Gather all the ingredients for the croissant sandwich including croissants, eggs, Milton cheddar cheese, and ham.

Heat the Croissants
While the eggs are cooking, cut the croissants in half and toast them lightly in a toaster or under a broiler until golden brown.

Assemble the Sandwich
On the bottom half of each toasted croissant, layer scrambled eggs, slices of Milton cheddar cheese, and ham. Place the top half of the croissant over the filling.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into small cubes (about 1-inch pieces).

Cook the Home Fries
In a large skillet, heat olive oil over medium-high heat. Add the cubed potatoes and season with salt, black pepper, and paprika. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and crispy.
