Chicken Fried Chicken

    Prepare the Chicken

    Begin by flattening the chicken breasts to an even thickness using a meat mallet or rolling pin.

    Marinate the Chicken

    In a bowl, combine buttermilk, eggs, salt, black pepper, and paprika. Add the chicken breasts and let it marinate in the refrigerator for at least 30 minutes.

    Bread the Chicken

    In a separate bowl, place the flour. Remove the chicken from the marinade and allow excess buttermilk to drip off. Dredge each breast in flour, pressing to adhere.

    Fry the Chicken

    In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Cream Gravy

    Make the Gravy

    In the same skillet used for frying, pour off all but 1 cup of drippings. Whisk in 0.5 cups of flour and cook for 1-2 minutes until lightly browned.

    Add Milk

    Gradually whisk in the milk, stirring constantly until the mixture thickens. Season with salt and black pepper, then remove from heat.

Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the russet potatoes into even-sized pieces. Place them in a large pot and cover with cold water.

    Cook the Potatoes

    Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy.

Green Beans

    Prepare the Green Beans

    Trim the ends of the fresh green beans and rinse them under cold water.

    Cook the Green Beans

    In a pot of boiling salted water, cook the green beans for 3-5 minutes until tender but still crisp. Drain and transfer to a bowl.

    Sauté the Green Beans

    In a skillet, melt butter over medium heat. Add the green beans, salt, and black pepper, and sauté for 2-3 minutes until heated through.
