Method

Preparation of Brisket

    Trim the Brisket

    Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor.

    Apply Dry Rub

    In a bowl, combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper. Rub the mixture evenly over the brisket.

Cooking the Brisket

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket on the smoker and cook for approximately 6-8 hours, or until the internal temperature reaches 195°F (90°C).

    Wrap the Brisket

    Once the brisket reaches 165°F (74°C), wrap it in foil to retain moisture and continue cooking until it reaches the target temperature.

Preparing Burnt Ends

    Cube the Brisket

    Once cooked, remove the brisket from the smoker and let it rest for 30 minutes. Cut the brisket into 1-inch cubes.

    Toss in Sauce

    In a bowl, toss the brisket cubes with your choice of BBQ sauce until well coated.

Finishing Touches

    Return to Smoker

    Place the sauced brisket cubes back on the smoker at 275°F (135°C) for another 1-2 hours, allowing them to caramelize.

    Serve

    Serve the burnt ends with your choice of two sides and additional BBQ sauce on the side if desired.
