Method

Chili Preparation

    Cook the Beef

    In a large pot, brown the ground wagyu beef over medium heat until fully cooked. Drain excess fat.

    Add Vegetables

    Add diced onion, minced garlic, and bell pepper to the pot. Sauté for about 5 minutes until softened.

    Mix Ingredients

    Stir in the tomato sauce, kidney beans, chili powder, cumin, salt, and black pepper. Simmer for 20 minutes.

Home Fries Preparation

    Cook the Potatoes

    In a skillet, heat olive oil over medium heat. Add diced potatoes and season with paprika, salt, and black pepper.

    Fry Until Golden

    Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

Topping Preparation

    Cook the Bacon

    In a separate pan, cook the chopped patchwork bacon until crispy. Set aside.

    Fry the Eggs

    In the same pan, fry the eggs over easy until the whites are set but the yolks are still runny.

Biscuit Preparation

    Make Biscuit Dough

    In a mixing bowl, combine flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.

    Add Milk and Form Biscuits

    Stir in milk until just combined. Turn the dough onto a floured surface, knead gently, and cut out biscuits.

    Bake the Biscuits

    Place biscuits on a baking sheet and bake at 425°F (220°C) for about 15-20 minutes or until golden brown.

Assembly

    Layer the Ingredients

    On a plate, layer the home fries, followed by the wagyu chili.

    Add Toppings

    Sprinkle shredded Milton cheddar, crispy bacon, and place the over-easy eggs on top.

    Finish with Sauces

    Drizzle sausage gravy and hollandaise sauce over the stack. Serve with a warm biscuit on the side.
