Method
For the Chicken and Biscuits
- 1
Prepare the Chicken
Season the chicken breasts with salt, black pepper, and paprika. Dip them in buttermilk, then dredge in all-purpose flour, ensuring they are fully coated.
- 2
Fry the Chicken
Heat oil in a skillet over medium-high heat. Fry the chicken breasts for about 6-7 minutes on each side until golden brown and cooked through. Remove and let rest on paper towels.
- 3
Make the Biscuits
In a bowl, mix together the flour, baking powder, salt, and paprika. Cut in the butter until the mixture resembles coarse crumbs. Add milk gradually until a dough forms. Roll out and cut into rounds.
- 4
Bake the Biscuits
Preheat the oven to 425°F (220°C). Place the biscuits on a baking sheet and bake for 15-20 minutes until golden.
For the Sausage Gravy
- 5
Cook the Sausage
In a skillet over medium heat, cook the country sausage until browned and cooked through. Drain excess fat.
- 6
Make the Gravy
Sprinkle the flour over the cooked sausage and stir, cooking for 1-2 minutes. Gradually add milk while stirring. Cook until thickened. Season with salt and black pepper.
For the Home Fries
- 7
Prepare the Potatoes
Wash and dice the potatoes into small cubes.
- 8
For the Eggs
- 9
Fry the Eggs
In a non-stick skillet, melt butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 2-3 minutes.
