Preparing the Blackened Salmon

    Make the Blackening Seasoning

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, black pepper, and salt. Mix well and set aside.

    Prepare the Salmon

    Pat the salmon filet dry with paper towels. Rub olive oil over both sides of the salmon and generously coat it with the blackening seasoning.

    Cook the Salmon

    Heat a skillet over medium-high heat. Once hot, add the seasoned salmon and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a nice blackened crust.

Preparing the Herb Roasted Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash and chop the potatoes into bite-sized pieces. In a bowl, toss the potatoes with olive oil, fresh rosemary, fresh thyme, minced garlic, and season with salt and pepper.

    Roast the Potatoes

    Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until golden brown and crispy, tossing halfway through.

Preparing the Sautéed Asparagus

    Prepare the Asparagus

    Wash the asparagus and trim the woody ends.

    Sauté the Asparagus

    In a skillet, heat olive oil over medium heat. Add the asparagus, season with salt and pepper, and sauté for about 5-7 minutes until tender-crisp.
