Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or set up a wire rack over a sheet.

Pat the chicken wings dry with paper towels to remove excess moisture, which helps them crisp.

In a large bowl, whisk together baking powder, kosher salt, black pepper, paprika, and garlic powder until evenly combined.

Coat wings with rub
Add the wings to the bowl and toss until every piece is evenly coated with the baking powder rub.

Spread the coated wings in a single layer on the prepared sheet or rack, skin-side up, to maximize crispiness.

Bake in the preheated oven for 40–45 minutes, flipping halfway through, until the skin is crisp and juices run clear.

Meanwhile, in a small saucepan, melt butter over medium heat. Whisk in hot sauce, white vinegar, and garlic powder; simmer 1–2 minutes to blend flavors.
