Note on customization
This three-meat combo allows choosing any three of the four options: brisket, turkey, pork, or sausage. This recipe uses brisket, pork shoulder, and sausage. If you prefer turkey or another mix, adjust quantities accordingly.

Rinse and pat dry the brisket, pork shoulder, and sausage. Trim any excess fat from the brisket if desired.

Prepare a dry rub (adjust quantities to taste): 2 tablespoons paprika, 1 tablespoon brown sugar, 1 teaspoon salt, 1 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/2 teaspoon chili powder for heat. Lightly rub each meat with olive oil then apply an even layer of rub to all surfaces.

Let the rubbed meats rest at room temperature for 15-30 minutes, or refrigerate up to 2 hours before smoking.

Preheat the smoker to 225-250°F (107-121°C). Add oak or hickory wood for smoke flavor.

Smoke pork shoulder: Place on smoker and maintain 225-250°F. Smoke until the internal temperature reaches 195-203°F (90-95°C), typically about 6-7 hours depending on size. Wrap if desired for tenderness.

Smoke sausage: Arrange sausage links on the smoker. Smoke until internal temperature reaches 160°F (71°C), usually 1-2 hours.

Rest and slice: Remove meats from smoker, wrap if desired, and rest for 20-30 minutes before slicing. Slice brisket against the grain, and portion pork and sausage as desired.

Coleslaw: In a large bowl, combine shredded cabbage and carrot. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Toss dressing with vegetables and refrigerate at least 30 minutes before serving.

Baked beans: In a pot, simmer beans with diced onion, bacon or pork scraps, brown sugar, ketchup, mustard, and a splash of molasses. Simmer 45-60 minutes until flavors meld and beans are tender. Adjust seasoning with salt and pepper.

Serve: Plate the three meats with the two sides and offer barbecue sauce on the side.
