Prep and Flavor Shrimp and Sauces

    Marinate shrimp

    In a large bowl, combine 2 tablespoons olive oil, 4 minced garlic cloves, 1 teaspoon lemon zest, 1 teaspoon salt, and 1/2 teaspoon black pepper. Add the 2 pounds shrimp, toss to coat evenly, and let rest for 10-15 minutes.

    Make garlic butter

    In a small saucepan over low heat, melt 1/2 cup unsalted butter. Add 3 minced garlic cloves and cook about 1-2 minutes until fragrant. Remove from heat and stir in 1 teaspoon lemon juice and 1/4 teaspoon salt. Keep warm.

    Prepare cocktail sauce

    In a bowl, whisk together 1 cup ketchup, 2 tablespoons prepared horseradish, 1 tablespoon lemon juice, 1 teaspoon Worcestershire sauce, and 1/4 teaspoon hot sauce (optional). Refrigerate until serving.

Roasts and Grilling

    Toss 1.5 pounds small potatoes with 2 tablespoons olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper. Spread on a baking sheet and roast at 425°F (220°C) for 25-30 minutes, turning once, until crispy and golden.

    Cook corn

    Brush 4 ears of corn with a touch of olive oil and season lightly with salt. Grill over medium-high heat for 8-10 minutes, turning occasionally, until lightly charred and tender.

Shrimp and Platter Assembly

    Heat a skillet over medium-high heat with a drizzle of olive oil. Add the marinated shrimp in a single layer and cook 2-3 minutes per side until pink and opaque. Transfer to a warm plate.

    Brush the cooked shrimp with warm garlic butter. Arrange shrimp on a platter with roasted potatoes, grilled corn, and lemon wedges. Garnish with 1/4 cup chopped fresh parsley.
