In a bowl, combine brown sugar, paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper. Stir to create an even rub mix.

Prepare smoker
Preheat your smoker to 225-250°F (107-121°C). Add hickory wood chunks to the fire to create a steady smoke. If using a grill with a smoker box, set it up for indirect cooking.

Smoke rib tips
Arrange rib tips on the smoker grate in a single layer. Smoke for 2.5-3 hours, maintaining a steady temperature and adding more fuel or wood as needed to keep a light smoke and moist environment.

Spritz for moisture
Every 45 minutes during the cook, spritz the rib tips with Apple juice to help keep meat moist and enhance flavor. After the first hour, monitor the internal temperature and tenderness.

Make glaze
In a small bowl, mix barbecue sauce with apple cider vinegar and honey until well combined.

Rest and serve
Remove rib tips from the smoker. Let them rest for 10 minutes, then cut into individual portions and serve with extra barbecue sauce on the side.
