Method

For the chicken and coating

  1. 1

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.

  2. 2

Cut the chicken into finger-sized strips (about 4-5 cm long). If using chicken breasts, slice into evenly sized tenders.

  3. 3

In a shallow dish, whisk together flour, cornstarch, salt, and pepper.

  4. 4

In a separate bowl, whisk together the egg and milk to make an egg wash.

  5. 5

In a third dish, mix the panko breadcrumbs, paprika, and garlic powder. Add Parmesan if using.

  6. 6

Dredge each chicken strip in the seasoned flour, tapping off excess.

  7. 7

Dip the floured strip into the egg wash, allowing excess to drip off.

  8. 8

Coat thoroughly with the breadcrumb mixture, pressing gently to help adhesion.

  9. 9

Place coated strips on the prepared baking sheet. Lightly spray with olive oil.

  10. 10

Bake for 18-20 minutes, turning once halfway, until the chicken is cooked through and the coating is golden.

  11. 11

Remove from oven and let rest 2-3 minutes before serving.

For dipping sauce

  1. 12

In a small bowl, whisk together mayonnaise, Dijon mustard, and honey.

  2. 13

Stir in lemon juice if using. Taste and adjust sweetness or tang as needed.

  3. 14

Serve the chicken fingers warm with the dipping sauce on the side.
