Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.

Cut the chicken into finger-sized strips (about 4-5 cm long). If using chicken breasts, slice into evenly sized tenders.

In a shallow dish, whisk together flour, cornstarch, salt, and pepper.

In a third dish, mix the panko breadcrumbs, paprika, and garlic powder. Add Parmesan if using.

Dredge each chicken strip in the seasoned flour, tapping off excess.

Dip the floured strip into the egg wash, allowing excess to drip off.
