    In a large bowl, add the jerk seasoning and whisk in the smoked paprika, garlic powder, onion powder, dried thyme, and ground allspice until evenly combined.

    Add the lime juice to the spice blend and whisk to form a bright, tangy base.

    Whisk in the olive oil to emulsify the marinade and create a smooth coating.

    Pat the chicken thighs dry with paper towels and place them in a large resealable bag or shallow dish.

    Pour the prepared marinade over the chicken, ensuring each piece is well coated on all sides.

    Seal the bag or cover the dish and refrigerate for at least 2 hours, or up to overnight for deeper flavor.

    Cook the chicken

    Remove chicken from marinade and grill over medium-high heat (about 400°F / 200°C) for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Alternatively, bake at 425°F (220°C) for 25-30 minutes, turning once, until cooked through.
