Greek-style snapper directions

Preheat oven and oil dish
Preheat oven to 200°C (400°F). Lightly oil a baking dish with olive oil.

Prepare topping
In a bowl, combine cherry tomatoes (1 cup) and Kalamata olives (1 cup). Toss with olive oil (1 tablespoon), dried oregano (0.5 tsp), sea salt (0.5 tsp), and black pepper (0.25 tsp) until coated.

Season the fish
Pat dry the snapper fillets. Place them in the prepared dish. Brush each fillet with olive oil (2 tablespoons) and drizzle lemon juice (2 tablespoons) over them. Scatter minced garlic (2 cloves), lemon zest (1 teaspoon), and remaining oregano (0.5 tsp) over the fillets.

Add feta and assemble
Crumble feta cheese (100 g) over the fish. Scatter the prepared tomato-olive mixture around the fillets.

Bake
Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily.

Finish and serve
Remove from oven, garnish with fresh parsley (0.25 cup), and serve with lemon wedges if desired.
