Marinate chicken
In a bowl, whisk together 2 tablespoons olive oil, 2 tablespoons lemon juice, 1 teaspoon lemon zest, 1 teaspoon dried oregano, 3 minced garlic cloves, 0.5 teaspoon kosher salt, and 0.25 teaspoon ground black pepper. Add the chicken breasts and toss to coat. Cover and refrigerate 20-30 minutes.

Cook chicken
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Remove chicken from marinade and pat dry. Sear the chicken 4-5 minutes per side until golden and cooked through. Transfer to a plate and tent with foil to rest.

Prepare rice pilaf
In the same skillet, melt 1 tablespoon butter with 1 tablespoon olive oil. Add 1 small onion, sauté until translucent about 3-4 minutes. Add 2 minced garlic cloves and cook 30 seconds. Stir in 1 cup long-grain white rice and toast 1-2 minutes.

Simmer rice
Add 2 cups chicken broth and 2 tablespoons lemon juice to the rice. Bring to a boil, then reduce heat to low, cover, and simmer 15 minutes until rice is tender. If using olives, stir in 1/2 cup chopped kalamata olives toward the end of cooking.

Finish pilaf and serve
Fluff the rice with a fork. Stir in 2 tablespoons chopped fresh parsley. If desired, sprinkle 1/4 cup feta over the pilaf. Adjust seasoning with salt and pepper to taste. Slice the chicken and serve over the pilaf. Garnish with lemon zest and extra parsley.
