    Preheat and prep

    Preheat oven to 400°F (200°C). Lightly oil a baking dish or line with parchment paper.

    Make marinade

    In a small bowl whisk together 2 tablespoons extra-virgin olive oil, 2 tablespoons fresh lemon juice, 2 minced garlic cloves, 1 teaspoon dried oregano, 0.5 teaspoon dried thyme, and season with salt and freshly ground black pepper to taste.

    Prepare fish and vegetables

    Pat snapper fillets dry with paper towels. Place them in the baking dish. Scatter halved cherry tomatoes and sliced kalamata olives around and over the fillets.

    Add feta and garnish herbs

    Crumble feta cheese over the fish and sprinkle chopped fresh parsley over the dish.

    Bake and finish

    Pour any remaining marinade over the fillets. Bake for 12–15 minutes, until the fish is opaque and flakes easily. Remove from oven and garnish with lemon slices before serving.
