Make the roux
In a large heavy pot, heat 1 cup vegetable oil over medium heat. Slowly whisk in 1 cup flour and stir constantly to form a dark roux (about 15–25 minutes). Adjust heat to avoid burning; aim for a deep chocolate color.

Brown the sausage and chicken
Add andouille sausage to the pot and cook 3–4 minutes to render flavor. Add the chicken pieces and sear for 2–3 minutes, coating with the roux and vegetables.
Liquids and Seasonings
- 5
Season and deglaze
Stir in Cajun seasoning, dried thyme, salt, and black pepper. Add bay leaves to the pot.
- 6
Add liquids
Pour in the chicken stock and the can of diced tomatoes with their juice. Bring the mixture to a gentle simmer.
- 7
Simmer
Reduce heat to maintain a gentle simmer. Partially cover and simmer for 60–90 minutes, stirring occasionally. If too thick, add more stock or water as needed.
Finish and Serve
- 8
Add okra and finish
Stir in okra during the last 20–25 minutes of simmering, allowing it to tenderize without becoming mushy. Taste and adjust seasoning if necessary.
