    Prepare aromatics

    Cut chicken into bite-sized pieces and slice the sausage into rounds. Chop onion, celery, and green bell pepper; mince the garlic. Rinse and start cooking the rice to yield about 4 cups cooked.

    Make the roux

    In a large heavy pot, heat 1 cup vegetable oil over medium heat. Slowly whisk in 1 cup flour and stir constantly to form a dark roux (about 15–25 minutes). Adjust heat to avoid burning; aim for a deep chocolate color.

    Add aromatics to roux

    Stir in the chopped onion, celery, and bell pepper; cook until softened and translucent, about 6–8 minutes. Add minced garlic and cook 1 minute more.

    Brown the sausage and chicken

    Add andouille sausage to the pot and cook 3–4 minutes to render flavor. Add the chicken pieces and sear for 2–3 minutes, coating with the roux and vegetables.

    Stir in Cajun seasoning, dried thyme, salt, and black pepper. Add bay leaves to the pot.

    Stir in okra during the last 20–25 minutes of simmering, allowing it to tenderize without becoming mushy. Taste and adjust seasoning if necessary.
