Prep fish
Pat dry the snapper fillets with paper towels. Season both sides generously with salt and pepper.

Dredge fillets
Place all-purpose flour in a shallow dish. Lightly season the flour with a pinch of salt and pepper. Dredge each fillet in the flour, shaking off excess.

Sear fish
Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. When hot, add the fillets and sear until golden and just cooked through, about 2-3 minutes per side. Remove to a warm plate.

Make almondine sauce
In the same skillet, add remaining butter. Add minced shallot and garlic; sauté until translucent and fragrant, about 1-2 minutes. Deglaze with white wine and reduce by half, 2-3 minutes.

Finish sauce
Stir in lemon juice and lemon zest. Return the fish to the pan, spooning sauce over. Cook 1-2 minutes to reheat and meld flavors. Remove from heat.

Toast almonds and finish
Sprinkle toasted slivered almonds over the fish and drizzle with chopped parsley.

Arrange the snapper almondine with a side of green beans. Garnish with additional lemon wedges if desired.
