Prepare and preheat
Preheat oven to 350°F (175°C). Grease a 8x8 inch baking dish with a thin layer of butter and set aside.

Whisk custard base
In a large bowl, whisk together eggs, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt until well combined and slightly pale.

Heat dairy
In a small saucepan, warm the milk and heavy cream over medium heat until just simmering. Do not boil.

Temper and combine
Slowly whisk the hot dairy into the egg mixture to temper. Stir until smooth and fully incorporated.

Add bread and optional raisins
Fold in the cubed bread and raisins if using. Gently stir to coat all bread with custard. Let soak for 10–15 minutes, stirring once or twice so all pieces absorb the custard.

Pour the soaked bread mixture into the prepared dish. Drizzle the melted butter over the top. Bake for 40–45 minutes, or until the centers are set and the top is golden brown.

Allow the bread pudding to cool for about 10 minutes. Dust with powdered sugar if desired and serve warm. Optional: drizzle with caramel sauce or serve with whipped cream.
